This is a favourite snack to make for a group of people or when you need to make some thing ahead to take to a party. These little guys freeze well! They’re always a big hit AND they’re healthy! It can be hard to find a great gluten and dairy free dessert.
I highly recommend using a food processor to make them. I’ll save you the headache and tell you right now do not attempt this recipe with a Magic Bullet! Trust me, this is coming from experience.
There are many versions of this same type of snack. I was first introduced to it in the cookbook “the kind diet” by Alicia Silverstone.

MAKES 10 – 12 BALLS
1/2 cup Walnuts |
1/2 tsp. Vanilla extract |
1/2 cup Pitted Dates |
1/4 tsp. Fine Sea Salt |
Scant 1/2 cup Raw Carob or Cacao powder |
1/2 cup Whole Almonds |
Scant 1/2 cup Maple Syrup |
2 cups Shredded Unsweetened Coconut |
1/2 cup almond butter |
Place the walnuts in a food processor and process until coarsely ground. Add the dates, and pulse until well combined with the nuts. Add the carob powder, syrup, almond butter, vanilla extract, and salt. Process until the mixture is thick and smooth. Add the almonds, and pulse a few times until combined; you want them to remain in crunchy chunks.
Form the mixture into golf-ball-size balls with your hands. Roll the balls in coconut. Place in a sealed container in the freezer until hardened.
